
Apple Pie Breakfast Pudding
The healthy indulgent one.
Eat hot for pudding or make the night before for a ready made nostalgic hug of a breakfast.
Ingredients
Stewed apple
- 2 eating apple
- pinch of cinnamon
1 sachet Wander Foods Noatmeal Apple & Cinnamon
Paleo clean eating custard
- 3/4 cups coconut milk
- 1 tbsp maple syrup 100%
- 1/2 tsp vanilla extract or 1 vanilla pod
- 1 egg
- 1 1/2 tbsp arrowroot powder
Directions
Stewed apples
- Peel and core apple. Dice into 1cm cube pieces.
- Add apple, cinnamon and a splash of water to a pan with lid.
- Cover and simmer for 30 minutes or until soft. Stir occasionally.
Make up Noatmeal according to instructions.
Paleo clean eating custard
- Whisk together egg, vanilla & maple syrup. If using vanilla pod, add this to the pan.
- Combine the arrowroot powder with two tablespoons of the coconut milk to form a smooth paste.
- In a large saucepan. Combine egg mix, arrowroot mix & coconut milk. Whisk continuously to ensure no lumps are present.
- Heat in a saucepan on low to medium heat until the mixture starts to simmer. THICKENING WILL OCCUR IN SECONDS so keep stirring.
- Simmer for two minutes. STIR CONSTANTLY to prevent lumps forming as custard thickens.
We have chosen to use eating apples as there is no need to add extra sugar. Pink lady apples are a good sweet apple. Keep an eye on the apples as they can catch and burn, so top up with extra water when needed.
The Noatmeal can be prepared using hot water, it to make it super indulgent, by all means use your milk of choice.
The custard is a fantastic all rounder. You can use almond milk too, which is really tasty and would work so well with the apples. There is probably too much here, but it will keep for the next days brekkie too.
If you really cannot be faffed to make this, yoghurt is just as good a substitute.
